A nutritional score for every dish, explained to guests

iAlacarte calculates an estimated nutritional score for each dish, using the public Nutri-Score method, and explains it to guests in one sentence. For drinks and branded products, it also shows the NOVA group. It is not the official Nutri-Score, which is reserved for packaged products.

Method

How the score is calculated

iAlacarte applies the public Nutri-Score method to the dish recipe, per 100 g: unfavourable points for energy, sugars, saturated fat and salt; favourable points for fibre, protein, fruit, vegetables and legumes. The total gives a letter from A to E.

Amounts come from the ingredients declared on your menu, public food composition tables (ANSES-Ciqual, USDA, FAO) and an estimated portion. When the recipe is unknown or too incomplete, no score is shown: better no score than a made-up number.

Processing

The NOVA group

NOVA classifies foods into four groups according to their degree of processing: 1, unprocessed or minimally processed foods; 2, culinary ingredients; 3, processed foods; 4, ultra-processed foods.

iAlacarte shows the NOVA group below the score for drinks and branded products when it is provided on the product sheet. It is never estimated. NOVA describes the degree of processing, not nutritional quality: a product can be NOVA 4 and score well, or the other way around.

Limits

What the score is not

  • Not the official Nutri-Score. The official Nutri-Score is reserved for packaged products and issued by Santé publique France; restaurant dishes are outside its scope.
  • Not mandatory. No regulation requires a nutritional score on a restaurant menu.
  • Not medical advice. It is a guide for comparing dishes; for a strict diet or medical condition, guests should consult a healthcare professional.
  • Not a measurement. Portions and quantities are estimated; the dish page tells guests this.

Frequently asked questions

Is this the official Nutri-Score?
No. It is an estimated nutritional score, calculated using the public Nutri-Score method. The official Nutri-Score is reserved for packaged products and issued by Santé publique France.
Why is the score an estimate?
A dish does not have a label: quantities are estimated from declared ingredients and a standard portion. The dish page makes this clear to guests.
What does NOVA 3 mean?
A processed food, in a four-group classification (1: unprocessed or minimally processed, 4: ultra-processed). NOVA describes the degree of processing, not nutritional quality. iAlacarte shows it for drinks and branded products when it is provided on the product sheet.
Can a dish have no score?
Yes. When the recipe is unknown or too incomplete, or for an alcoholic drink, no score is shown rather than a made-up number.
Does the score change if I edit a recipe?
Yes. When you edit a dish's ingredients from your dashboard, nutrition data and the score are recalculated.
Is displaying a score mandatory?
No. No regulation requires a nutritional score for restaurant dishes. Some countries require large chains to display calories; that is different information. The score is a service you choose to offer.
