The Data Sources Behind Every Listing

iAlacarte does not estimate from memory: nutritional values, allergens, health indicators and wine profiles rely on public reference standards, imported and verified. This page names them, along with their scope and limitations.

Nutrition

Food composition tables

  • Ciqual (ANSES, France): 3,186 foods and dishes, 76 fields read — energy, macronutrients, sugars, fatty acids, fibre, sodium, vitamins and minerals.
  • USDA FoodData Central (United States): 13,413 foods (Foundation, SR Legacy, FNDDS), including 1,596 measured composite dishes — pizzas, burgers, pasta dishes, soups.
  • FAO/INFOODS: regional tables for West Africa, fish, legumes and animal-source foods, read with their nutrient codes.
  • Open Food Facts: around 500,000 packaged products, used for branded drinks and products (ingredients, additives, NOVA group, official Nutri-Score), with plausibility checks that discard outlying records.

For a restaurant dish, the listing is built up: each recipe ingredient is matched to a line in these tables, weighted by its class (oil, sauce, grated cheese, topping…) and converted to a serving. See Nutritional values in restaurants.

Allergens & health

Regulations and sourced criteria

The allergens shown are the fourteen listed in Regulation (EU) No 1169/2011, plus buckwheat. Every allergen must be supported by a recipe ingredient; an allergen without supporting evidence is removed.

Health indicators (pregnancy-compatible, low salt, nightshade-free, low histamine…) come from a criteria register in which each signal cites its authority: Regulation (EC) No 1924/2006 for claims, ANSES and Santé publique France recommendations for pregnancy, EFSA, IARC, the SIGHI list for histamine, APG classification for nightshades, Sydney glycaemic index tables, and Monash for FODMAPs. When a measured value contradicts an indicator, the indicator is removed.

Wine & bar

Grape varieties, appellations, classic drinks

  • Profile tables: 116 grape varieties (tannin, acidity, body, aromas) and 113 appellations (ageing, sugar, bubbles, fortification), compiled from WSET Level 3, Wine Grapes (Robinson, Harding, Vouillamoz), the Oxford Companion to Wine and INAO specifications; when in doubt, no entry is made.
  • Appellations and grape varieties: 1,697 additional names from Wikidata, loaded after the verified tables, which retain priority.
  • Tasting notes: nearly 130,000 wines from a public critics dataset (Wine Enthusiast), used for the aromas and grape varieties of a named cuvée.
  • Classic drinks: a verified reference of around sixty drinks — IBA cocktails, anise aperitifs, kirs, mulled wine, juices, waters — with serving format, calories and ABV as served; TheCocktailDB and Open Food Facts supplement the drinks reference.
Recipes

When the menu does not detail a dish

When a menu names a dish without listing its ingredients, a reference recipe may be suggested: a dictionary of classic dishes, supplemented by an extract from the public RecipeNLG corpus. A recipe whose meat or fish contradicts the dish name is rejected, and a recipe suggested for an add-on without a description is deleted along with everything derived from it.

Limitations

Authoritative sources, not guarantees

These references describe typical foods and wines. The actual composition of a dish depends on the supplier, season and preparation. iAlacarte displays estimates, removes what it cannot support, and the restaurant owner remains responsible for validating sensitive information.
FAQ

Frequently asked questions about references

Do nutritional values come from AI?
No. They are built from public tables (Ciqual, USDA, FAO) matched to recipe ingredients. AI is used to read the menu and write content, not to produce a figure.
Why is a value sometimes missing?
Because no table provides it for this recipe, or a check discarded it as implausible. An unknown value is never shown as a number.
Is branded drink data reliable?
Open Food Facts is populated by contributors: iAlacarte consolidates multiple records for the same product, discards physically impossible values, and a manually verified drinks catalogue may take priority.
Can a wine's grape varieties be made up?
No. They come from the menu, or from the appellation when it requires them (verified tables, then Wikidata). Without a source, the listing does not state them.
