A guest hesitating between three starters doesn't have time to read three nutritional tables. A concise visual indicator lets them compare in seconds.

The Nutri-Score, designed for packaged products, provides a public, recognized methodology that iAlacarte adapts to the restaurant context.

Method

How does iAlacarte estimate a dish's nutritional score?

iAlacarte applies the Nutri-Score calculation logic to declared dishes: weighting negative points (energy, sugars, saturated fats, sodium) against positive points (fiber, protein, fruits and vegetables, legumes) to produce a grade from A to E.

Ingredients, portions, nutritional tables

The calculation draws on:

  • the ingredients declared by the restaurateur;
  • the estimated portions by weight or volume;
  • the composition tables from ANSES/CIQUAL, USDA, FAO/INFOODS;
  • typical preparation rules (cooking method, sauce, garnish).

Explanation

How the AI explains the score to guests

The score is never a raw number. The AI Maître d'Hôtel explains the why: "B, primarily thanks to steam cooking and a moderate portion of fat." Guests understand, can adjust, can compare.
